Be sure sure your wedding Champagne is served properly, a few more tips are in order: chill the bottle well in a bucket of ice and water for 30 minutes. Open the bottle by removing the wire muzzle, grasping the cork firmly with one hand. Turn the bottle, not the cork: the pressure inside the bottle will ease the cork out with a soft, gentle pop. (Sudden, loud popping only causes loss of effervescence and wasted wine!) Remember always to use tall, tulip or flute glasses, which capture Champagne bubbles and concentrate its aromas. Don't use saucer type glasses which dissipate the bubbles rapidly and are awkward to hold.
